Wisconsin Dairy Scientist Explains the Physics Behind a Proper Cheeseburger Melt

A cheese expert based in Madison, Wisconsin, says the difference between a great cheeseburger and a mediocre one comes down to basic food science, not just personal taste.

Gina Mode, coordinator of the Cheese Industry and Applications Group at the Center for Dairy Research (CDR) in Madison, told Fox News Digital that a good cheeseburger slice has to do three things at once: taste right, melt properly, and stay on the burger instead of sliding off.

“A classic cheeseburger, what I think of is that orange slice, which is usually an American cheese or cheddar cheese,” Mode said. “You want it to have that nice cheese flavor, that cheddar flavor. You want it to have a nice softness to it when it melts, and you also don’t want it to flow off your burger.”

According to Mode, good melting depends on the cheese’s composition, its pH, and how much intact casein — the milk protein — remains in it. As cheese ages, that structure breaks down. Flavor improves, but meltability suffers.

“You’ll notice an older cheddar is going to crumble, and it’s probably going to oil off if you melt it,” she said.

Younger natural cheeses hold their structure better on a burger. Mode listed Colby, Monterey Jack, Muenster, Swiss, low-moisture mozzarella, and provolone as reliable options.

Aged cheeses aren’t disqualified — they just need a different approach. Mode said CDR’s research chef favors smoked blue cheese or Brie on a burger, and suggested shredding or crumbling aged cheeses on top, or working them directly into the patty for a Juicy Lucy-style burger.

Why American Cheese Melts So Consistently

American cheese remains popular because its melt is predictable. “American cheese is a processed cheese,” Mode explained. “You start with a natural cheese, like a cheddar, and you shred it or grind it, and then you cook it along with an emulsifying salt.”

Cheese is made up of protein, fat and water, and the fat and water “don’t want to mix together,” Mode said. The emulsifying salt binds those components so the cheese melts smoothly and completely.

Mode grew up on a fifth-generation dairy farm and now works at CDR, which is funded by dairy farmers and serves cheesemakers across an 11-state region. She pointed to a newer option from a Wisconsin cheesemaker: a “natural American cheese” made without emulsifying salt.

“They changed the cheesemaking recipe — the way they make the cheese, so that it has the same or similar functionality to an American processed cheese while it still is a natural cheese,” Mode said. “So there’s that out there, too, for folks who are looking for a cleaner label.”

She also recommends trying flavored cheeses with spice, herbs or smoke, as well as cold pack cheese — the spreadable kind typically served with crackers. “It’s great to spread on your burger bun, especially if you toasted the bun so it’s a little warm,” she said.

On timing, Mode said to add cheese only after the burger has finished cooking and rested briefly. “If it’s one that takes a little more oomph to melt, like a nice thick piece of cheddar, you can put a cover on it, and it’ll hold that heat in,” she said.

The comments arrive around National Cheeseburger Day. A 2015 YouGov/HuffPost survey of 1,000 U.S. adults found 71% preferred cheeseburgers over plain hamburgers, which drew just 20%. Among cheeseburger fans, American cheese was the top pick at 40%, followed by cheddar at 31%, Swiss at 10%, provolone at 5%, and blue and Jack cheese tied at 4% each.
